Background:
 Dr Taiwo A. Aderinola is a lecturer/researcher at the Food Science and Technology Department of the University. His research has revolved around food processing and preservation. He is interested in value addition to locally available under-utilized crops. Curently, his research focus is on the exploration of bioactive components (peptides and polyphenols) in under-utilized seeds and utilization of such for the development of functional foods and nutraceuticals, which could serve as an alternative means to modulate some non-communicable diseases (hypertension, diabtes, cancer etc). Dr Aderinola's research has been supported by some fellowships/awards. These include a research grant from the International Foundation of Science (2013) on Nutritional analysis of Ximenia fruit juice, fellowship award from the Tertiary Education Trust Fund from the Nigerian goverment for a split-site visit at the University of Manitoba, Canada towards his doctoral degree (2015), which was based on the bioactivities of Moringa oleifera seed proteins (antioxidant, antidiabetic and antihypertensive). In 2019, he also secured a postdoctoral fellowship at the University of Pretoria, South Africa to work on the biaoctivities of peptides from malted/fermented millet and sorghum. Dr Aderinola has several publications in reputable peer-reviewed journals
