Abstract:
Food safety is a fundamental concern to both consumers and food industries as there are increasing numbers of reported cases of food-associated infections. Furthermore, lipid oxidation is another issue affecting quality loss in muscle foods. Recent enhancement of interest in green consumersism, potential health problems associated with synthetic additives and antibiotic resistance demonstrated by some food pathogens have led to an increased scientific interest in herbs and spices. A number of studies have shown that medicinal plants possess wide range of antibacterial activity against many pathogens. Plants are rich in a wide variety of secondary metabolites, such as alkaloids, coumarins, essential oils, flavonoids, flavones, flavonols, lectins and polypeptides, phenolics and polyphenols, quinones, tannins, and terpenoids.These compounds which have been demonstrated to possess biological activities including antioxidant, anti-inflammatory, anti-carcinogenic, and antimicrobial properties. In addition, they have been shown to exhibit inhibitory activities against lipid oxidation and the growth of foodborne pathogens in both microbiological media and food systems. Their antibacterial activities against important foodborne pathogens such as Bacillus cereus, Campylobacter jejuni, Clostridium botulinum, Clostridium perfringens, Escherichia coli, Listeria monocytogenes, Salmonella spp., Shigella spp., Staphylococcus aureus, Vibrio spp. as well as antioxidant activities have been documented. This book attempts to summarize the progress made on antibacterial and antioxidant activities of herbs and spices and their essential oils in vitro and their applications in food systems as preservatives.

Abstract:
Crude ethanolic extract from bulbs of Eleutherine americana was subjected to antimicrobial screening including six Gram-positive, seven Gram-negative bacteria, six fungal species and two yeasts. The extract demonstrated good antibacterial activities and produced inhibition zones ranging from 13.0 to 20.0 mm against all the Gram-positive bacteria tested, however, only one out of the Gram-negative bacteria tested, Erwinia spp, was sensitive. In addition, the extract exhibited antifungal activity against Aspergillus niger, Rhizopus spp. and Penicillium spp. while all the dermatophyte fungi and yeasts were resistant to the extract treatment. Growth curve in the presence of the crude ethanol extract at 4MIC showed bacteriostatic and fungistatic effects by 5- and 3-log reduction, respectively. Data from this study revealed that E. americana bulb may be a good antimicrobial agent against foodborne Gram-positive bacteria, certain Gram-negative, and food spoilage organisms
