Abstract:

The effects of different flavouring/colouring agents and fruits on the quality and acceptability of stirred soy-yoghurt were studied. Soy-yoghurts flavoured with strawberry, vanilla, orange, orange fruit, pineapple fruit and pawpaw fruit were compared for protein, pH, percentage lactic acid, soluble solids, percentage syneresis, total solids and microbial count with plain soy-yoghurt. Sensory evaluation was conducted in order to determine the acceptability of the samples. The pH and percent lactic acid ranged from 4.4-4.7 and 0.9-1.08%, respectively on the first day of storage while the values were 4.1-4.3 and 1.44-1.71%, respectively on the eighth day of storage at 6°C. Soluble solids of yoghurt samples ranged from 18.4-27.9% on the first day and were between 18.4-25.4% on the eight day of storage. The average percent syneresis of flavoured and fruit soy-yoghurts were 42.03 and 46.3%, respectively. The values increased with increasing storage days. The average protein content of fruit Soy-yoghurts was 5.01% while the average for flavoured soy-yoghurts was 3.93%. The total solids of plain yoghurt was 14.5%, flavoured soy-yoghurt was 13.5% and fruit soy-yoghurts was 12.5%. Microbiological examination revealed that the samples were within the acceptable minimum standards. The sensory evaluation showed that there was no significant difference in taste among all the samples. However, there were significant difference in the colour, aroma, consistency and overall acceptability of soy-yoghurts samples. The sensory evaluation revealed that there was preference for strawberry, vanilla, plain, orange flavoured, pineapple fruit flavoured yoghurts relative to pawpaw and orange fruit flavoured-yoghurts.

Abstract:
The body mass indices of 606 randomly selected adolescents in institutionalised schools in Akure, Nigeria, was investigated using anthropometric indices. Results showed that the mean age of males (163.37 months) was significantly higher (P < 0.05) than the females (158.38 months). SD Z-scores for weight-for-height (SDWHZ) values were 0.9952, 0.9922 and 1.0000; while SD Z-scores for height-for-age (SDHAZ) values were 1.0087, 0.9901 and 0.9999 respectively for males, females and overall. The height and weight of the pupils were not significantly different (P > 0.05), however the weight-for-height (W/H) and height-for-age (H/A) values were significantly different in the two groups (i.e male and female pupils). Weight, height and age showed positive correlation with W/H (R = 0.959, 0.624, and 0.573 respectively) the Z-score of W/H (WHZ); HAZ showed negative correlation with age and weight (R = -0.817 and – 0.222). Negative energy balance was observed (-2630.37 kcal male; -2512.32 kcal female). The mean energy intake was 1,266.7 kcal, representing 50% of the total daily energy required for 13 – 15 year olds. BMR is higher (2232.49 kcal) in males than in females (1654.66 kcal). The BMI for males was 17.70 and 18.81 for females. The relationship between age and the anthropometric and nutritional indices measured could be described using either linear or quadratic regression equations.

Abstract:

Microbes associated with jewellery and some body ornaments such as necklaces, earrings, hand chains, wristwatches, spectacles, rings, bangles and hairclips were investigated. Unused samples were obtained from the Oba Market, Akure, Nigeria to serve as control. Bacteria were found on all the samples collected for individuals while three out of the eight control samples had bacterial growth. The bacteria isolated include Staphylococcus aureus, S. albus, Listeria murrayi, B. cereus, B. subtilis, Pseudomonas aeruginosa and Rothia dentocariosa. No fungus was isolated from spectacles samples. Percentage occurrence of the fungal isolates from various samples were as follows: Aspergillus niger 75%, A. flavus 25%, Diplococcium sp. 25%, Articulospora sp. 50%, Alternaria sp. 38%, Geotrichum sp. 75%, Acaulopage microspora 12.5% and Penicillum sp. 38%. The bacterial load of the handchain was the highest, (9.6 x 10 4 cfu/ml), followed by wristwatches (8.4 x 10 4 cfu/ml), earrings (4.6 x 10 4 cfu/ml), necklace (4.4 x 10 4 cfu/ml), and bangles (4.0 x 10 4 cfu/ml) and ring (2.6 x 10 4 cfu/ml).
